I'm gonna eat what?
It’s true. Sometimes I feed my baby things I’d never eat and, well, actually find gross. This is one of them, but when you look at from a growing baby nutritional standpoint I’m totally justified. At least I think am.
According to NutritionData.com, 1 large egg yolk has just over 50 calories, 5 g of fat and 3 g of protein. It’s also a good source of Folate and Vitamin B12. Did you know that eggs contain, in varying amounts, almost every essential vitamin and mineral needed by humans as well as several other beneficial food components*? Now that’s what I’m looking for in a baby food!

Pumpkins ROCK! Heck, all winter squashes do, and all of them make great baby food.
According to NutritionData.com, pumpkins are:
a good source of Thiamin, Niacin, Vitamin B6, Folate, Pantothenic Acid, Iron, Magnesium and Phosphorus, and a very good source of Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Riboflavin, Potassium, Copper and Manganese.
That’s a lot of good stuff for baby and you!

I’m fairly new to quinoa. It definitely wasn’t something I grew up with. I didn’t even know it existed until a few years ago.
WHFood.com lists quinoa in their top World’s Healthiest Food list because it’s high in protein, magnesium, iron and it’s low in calories. One half cup cooked has about 110 calories, 4 g of fat and 5 g of fiber. Not bad for baby! Not bad at all!

Did you know one-fifth of a medium avocado, or a one-ounce serving, has 50 calories and contributes nearly 20 vitamins and minerals, including 4% of the recommended Daily Value (DV) for vitamin E, 4% vitamin C, 8% folate, 8% fiber, 2% iron, 4% potassium, with 81 micrograms of lutein and 19 micrograms of beta-carotene (According to avocado.org).
Did you also know blended avocado makes a wonderful pudding consistency. Really, it does! Check out my Chocolate Pudding experiment on GreenLiteBites. That picture doesn’t lie. When whipped and mixed with sweet ingredients the avocado creates an icing texture and it is amazing! Why not take advantage of this for baby? Whenever I mention Butter Beans online I get a lot of funny looks in the form of comments.
“What are they?” “Where do you get them?” “What do they taste like?”
Butter Beans are simply large Lima Beans. I don’t think I ever realized they weren’t popular until I started food blogging. My mom served them as a side dish just warmed from the can and honestly, I always loved them. They are soft, creamy and like most beans, have a mild taste. Side note: They also happen to make fun cookies!
Butter Beans make a great finger food for littles one but you have to watch the skins as they can cause a choking hazards. For now I puree them and have discovered Little Bean’s new favorite dish…. Continue reading »
