Did you know one-fifth of a medium avocado, or a one-ounce serving, has 50 calories and contributes nearly 20 vitamins and minerals, including 4% of the recommended Daily Value (DV) for vitamin E, 4% vitamin C, 8% folate, 8% fiber, 2% iron, 4% potassium, with 81 micrograms of lutein and 19 micrograms of beta-carotene (According to avocado.org).

Did you also know blended avocado makes a wonderful pudding consistency. Really, it does! Check out my Chocolate Pudding experiment on GreenLiteBites. That picture doesn’t lie. When whipped and mixed with sweet ingredients the avocado creates an icing texture and it is amazing! Why not take advantage of this for baby? May I introduce Banana Blueberry “Pudding” made with avocado. You’ve got to try this one…

Start with half a banana.
You can always add more based on taste but I found 1/2 is perfect.

Roni, thank you so much for these posts. I’ve been getting so overwhelmed lately about food for my daughter (almost 1!!!). I’m totally over thinking things. I love your simple, no nonsense approach to all of this. It really helps me to refocus and calm down a little.

Awesome! My twins are 6 months and we have been slowly adding in some new foods. I think it’s time to try something like this- they love bananas in anything that’s for sure. I also think it’s funny your son sucks his thumb when he eats- my daughter does that too whenever it’s a new food. Then we all wait for the facial expression after to see whether it’s a go or not! Usually is ;) Thanks!
