Butternut Squash

Nothing says “fall is coming” more to me than winter squash. I love seeing the bins at the grocery store full of acorn, spaghetti and of course, butternut squash.

I’m fairly new to this amazing vegetable. I tried my first one a few years ago and fell in love. It has a sweet flesh similar to a sweet potato, but softer and less dense once cooked. You’ll probably laugh, but my favorite way to eat them is in fry form like this

It was time to spread the squash love to Little Bean. May I present our Butternut Squash Adventure… (Warning: photo overload ahead. I was having too much fun with the camera)

Our Squash
The store didn't have BIG ones yet so I settled on this small to medium one for our adventure.

What a lucky kiddo. Butternut squash is yum… and apparently a great facial as well.

Where did you get the Graco toys for the high chair? I found people charging like $25 each for them on eBay!

Sorry Hollie – It was a hand me down. I have no idea. Although I’m pretty sure my friend got them with her set.

That’s awesome! I’ve never done butternut squash, but that’s a great idea. I’m sure others have cautioned you of this before, but I made a whole bunch of baby food for my son and had it in the freezer and one day at the age of 9 months he decided he was done with baby food. DONE. He wouldn’t let me come near him with a spoon. My advice…don’t make too much in advance. :)

hey Roni,

Thanks for this idea above. I like the idea of using old baby food jars for storage. I have been using ice cube trays which works well also. The baby food jars are great for “on the go” too.

Thanks,
Robyn
